Ingredients
- 300 grams of flour, sifted
- 1 sdt baking powder
- 200 grams walnuts, coarsely chopped
- 1 tsp cinnamon powder
- 1 tbsp sugar
- 1 egg white
- 200 grams of fine granulated sugar
- 125 grams of butter
- 2 chicken eggs
- 2 chicken egg yolks
- 1 tsp nutmeg powder
- 2 tsp cumin, roasted, mashed
- 2 tbsp belly orange peel
- 50 grams candied
- 150 ml liquid milk
Glaze
- 150 grams of powdered sugar
- 2 tbsp orange juice
- 150 grams canned mandarin oranges, drained
- Prepare a baking sheet measuring 20x20x5 cm. Line all sides of the baking sheet with parchment paper, set aside.
- Mix and sift the flour with the baking powder. Set aside.
- Mix and stir the walnuts, cinnamon powder, sugar, and egg whites until smooth. Set aside.
- Whisk the granulated sugar and butter until white and fluffy. Add the eggs and egg yolks while stirring constantly until fluffy.
- Add nutmeg, cumin, orange zest, and cider. Stir until smooth, pour in the milk and flour mixture. Stir again until smooth.
- Pour 1/2 of the batter into the pan. Flatten, sprinkle the walnut mixture on top until smooth. Pour the remaining batter back into the pan. Flatten.
- Bake the dough for 40 minutes at 180 degrees Celsius. Lift.
- Glaze : Mix and stir until all ingredients are well blended.
- Grease the surface of the cake with glaze, cut into 4x4 cm.
