Broccoli lemper recipe
Ingredients:- 400 grams of glutinous rice, soak 1 hour
- 160 ml coconut milk from 1/2 coconut
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1 bay leaf
- 1 lemongrass stalk, bruised
- 1 broccoli, cut into florets, brewed, finely chopped
- 2 boiled chicken thighs, shredded
- 5 lime leaves, remove the bones
- 1 cm ginger, crushed
- 1 lemongrass stalk, bruised
- 1/2 teaspoon salt
- 1/8 teaspoon pepper powder
- 1 teaspoon sugar
- 200 ml of water
- 10 sprigs of basil, picked
- 2 tablespoons oil for frying
- 5 large red chilies, seeds removed
- 6 red onions
- 2 cloves of garlic
How to make broccoli lemper :
1. Make the filling first. Saute finely ground spices, lime leaves, ginger, and lemongrass until fragrant. Add chicken. Stir well. Season with salt, pepper powder and sugar. Stir well.
2. Pour in the water. Stir until absorbed. Add basil leaves. Stir briefly. Remove and set the chicken aside.
3. Steam the glutinous rice for 20 minutes. Lift.
4. Boil the coconut milk, salt, sugar, bay leaf, and lemongrass while stirring until it boils. Add the glutinous rice. Stir until absorbed. Chill.
5. Steam the sticky rice again over medium heat for 30 minutes until cooked.
6. Mix the hot sticky rice and chopped broccoli until smooth.
7. Take a little sticky rice. Flatten and give the filling. The oval shape is not too big.
