Konro soup is one of the famous dishes in Makassar. The soup in this konro soup is similar to rawon because both use kluwek.
Apart from kluwek, other aromatic ingredients such as cinnamon, cloves, and bay leaves are also used.
Konro soup recipe
Ingredients
- 1 kg beef ribs, cut into segments
- 2 liters of water
- 3cm cinnamon
- 3 cloves
- 3cm bruised galangal
- 2 bay leaves
- 2 tbsp tamarind water
- 3 tbsp oil for frying
- 5 red onions, finely sliced
- Salt to taste
Ground spices
- 5 red onions
- 3 cloves of garlic
- 1 tsp round pepper
- 1/2 tsp pala
- 2 tbsp keluwek
- 50 grams of boiled red beans
- Salt to taste
How to make soup konro
- Boil the ribs with cinnamon, galangal, cloves, bay leaf, tamarind water, and salt until tender.
- Saute the sliced onion and ground spices until fragrant. Add it to the rib broth.
- Cook until boiling. Serve and serve hot with chili paste.
