  • 3 tbsp sesame oil (divided)
  • 3 large eggs
  • Salt and pepper to taste
  • 2 carrots, diced
  • 3 bunches scallions, thinly sliced ​​and separate the green parts and stems
  • 3 cloves of garlic, finely chopped
  • 1 tsp ginger peeled and finely chopped
  • 800 grams of rice left over from last night
  • 90 grams of frozen peas
  • 3 tbsp low sodium soy sauce

How to make oriental fried rice

1. Heat the skillet over high heat until it is really hot. Add a tablespoon of oil.

2. Beat the eggs with two tablespoons of water and a pinch of salt. Add to skillet, cook and stir until egg is soft and fluffy for thirty seconds. Remove and set aside.

3. Heat a frying pan over high heat. Add two tablespoons of oil, carrots, and white part of the scallion. Cook until lightly golden, about two minutes.

Add the garlic and ginger and cook for one minute until fragrant.

4. Add the cooked rice, peas and eggs to the pan. Pour in the soy sauce and cook, stirring, until hot, about one minute.

Season with salt and pepper to taste, add the green part of the leek, stir until evenly distributed.

5. Prepare a plate and serve fried rice while warm.
