Warteg-style Vegetable Lodeh Recipe, Fresh Savory Sauce

Vegetable lodeh is one of the mainstay vegetables in Tegal stalls or warteg which is a favorite of many people.


Generally, warteg-style lodeh vegetables consist of various vegetables such as pumpkin, carrots, eggplant, and corn.

Warteg-style lodeh vegetable recipe

Material:

  • 1 piece of corn, cut into 3 cm, halved
  • 1 Siamese pumpkin, peeled, cut into a match
  • 1 carrot, cut into rounds
  • 3 green chilies, cut into 1 cm
  • 2 bay leaves
  • 3 cm galangal, crushed
  • 25 grams of melinjo leaves
  • 1 1/2 tablespoons salt
  • 3 teaspoons brown sugar comb
  • 2,000 ml coconut milk from 1 coconut

Ground spices:

  • 3 hazelnuts, roasted
  • 1/2 teaspoon shrimp paste, fried
  • 8 red onions
  • 3 cloves of garlic
  • 1/2 teaspoon coriander

How to make vegetable lodeh a la warteg:

1. Prepare a pot and boil the coconut milk with bay leaves, galangal, and ground spices until all fragrant.

2. Add corn and carrots. Add salt, brown sugar, and stir until all dissolved.

3. When the corn is half cooked, add the chayote slices, carrots, melinjo leaves, and green chilies. Boil until all ingredients are cooked.
