You may be familiar with Neapolitan ice cream . This three-flavored ice cream was brought by immigrants from Italy to America.
In Italy, this ice cream is called spumone but in its presentation it is served with dried fruit and nuts. The name spumone changed when this ice cream was brought to America.
That said, this ice cream has been around since the 19th century. If you want to be creative to make Neapolitan ice cream, you can follow the recipe for Neapolitan ice cream as quoted from the book " 40 Recipes of 3 Generations " (2016) by Sufi S. Yahyono published by PT Gramedia Pustaka Utama.
Neapolitan ice cream recipe
Ingredients
- 1.5 liters of fresh milk
- 450 grams of sugar
- 2 tbsp cornstarch, dilute with a little water
- 4 egg yolks
- 75 grams of whipping cream powder
- 1/2 tsp vanilla
- 1/2 tsp strawberry essence + 1/3 red coloring, mix
- 3 tablespoons cocoa powder, dissolves with 3 tablespoons hot water + 1/2 chocolate paste, mix
How to make Neapolitan ice cream
- Pour milk and sugar into a clean saucepan, bring to a boil. Enter the cornstarch solution, stir until the mixture thickens and is cooked, turn off the heat.
- Pour the egg yolks in a large bowl, beat on low speed until smooth. Enter the cornstarch milk mixture little by little while beating slowly until the dough is soft. Add whipping cream powder, stir until smooth.
- Prepare three bowls, pour and divide the dough. Place strawberry essence, vanilla and chocolate coloring in each bowl.
- Cover the container with plastic, freeze in the freezer for about 3-4 hours until frozen.
- Remove from freezer , break the frozen dough, beat until the ice cream mixture is soft, freeze in the freezer for 3-4 hours. Remove from the freezer , break the dough, beat gently again and freeze. Do it twice to make it soft.
