Omelette Ingredients:

  • Enough oil for frying
  • 6 large eggs
  • 60 ml water
  • 2 tbsp refried or can be substituted with peanut butter
  • 25 grams of red onion, chopped
  • 50 grams of mexican cheese or can be replaced with cheddar cheese, grated and divided into two parts
Salsa sauce ingredients:
  • 2 medium tomatoes, chopped
  • half an onion, sliced
  • 1 small green bell pepper, chopped
  • 1 tbsp coriander, coarsely chopped
  • 1 tsp lemon or lime juice
  • Red chili to taste
  • 1 tsp cumin

How to make omelette and salsa sauce:

1. Salsa sauce : mix together tomatoes, shallots, paprika, coriander, lime juice, red chilies, cumin, salt, and pepper into a bowl. Set aside.

2. Heat a non-stick frying pan over medium heat, add enough oil. Beat eggs and water. Add half of the egg mixture to the skillet, edge the eggs.
