Ingredients

  • 1 tail (900 gr) chicken, split into 4 parts
  • 2 liters of water
  • 2 cm ginger
  • 3 lemongrass stalks, bruised
  • 1 tbsp salt
  • tsp white pepper powder
  • 1 tbsp sugar
  • 10 lime leaves, remove the leaves
  • 2 tbsp oil for frying
  • 50 ml of oil for frying
Seasonings (mash with a blender):
  • 5 pecans, roasted
  • 3 cm turmeric, roasted
  • 10 red onions
  • 6 cloves of garlic
Complementary Materials:
  • 50 gr vermicelli, soak until it blooms
  • 2 celery stalks, coarsely chopped
  • 2 tomatoes, cut into pieces
  • 3 boiled eggs
  • 2 tablespoons fried red onion
  • 100 gr bean sprouts
  • 100 gr round, finely sliced
  • 3 tbsp Bango Sweet Soy Sauce
Sambal Ingredients:
  • 60 gr red chili
  • 4 curly red chilies
  • 3 cloves of garlic
  • tsp salt

Cooking method

  1. In a saucepan, boil the water and chicken with the ginger for 15 minutes.
  2. While waiting for the chicken to boil, in a frying pan heat 5 tablespoons of oil. Saute ground spices and lemongrass until fragrant. Pour into the chicken stew.
  3. Add salt, pepper powder and sugar. Cook until the gravy is yellow and the chicken is cooked. Remove the chicken and set the broth aside.
  4. In a frying pan add 50 ml of oil. Fry the chicken in hot oil until browned by turning it over. Once cooked, shred the chicken. set aside
  5. To make the sambal, boil the cayenne pepper, red chili, and garlic until wilted. Lift. Add salt. Puree with a blender.
  6. Serve the soto soup with shredded chicken, complement, Bango Sweet Soy Sauce and chili sauce.
