But not only from chicken or duck, squid can also be cooked with this betutu process. 

The process of making squid betutu takes 45 minutes.

Ingredients 

Betutu Squid Ingredients 

  • 500 grams of whole squid, clean, remove the ink
  • 50 grams of young cassava leaves, boiled, squeezed and cut into pieces
  • 2 tablespoons cooking oil
  • 6 banana leaves to wrap
Ground spices 

  • 5 candlenuts, roasted
  • 3 lime leaves, remove the bones
  • 1 teaspoon shrimp paste, grilled
  • 1 teaspoon roasted coriander
  • 10 red onions
  • 4 cloves garlic
  • 4 large red chilies
  • 3 pieces of red chili
  • 2 cm galangal
  • 3 cm turmeric
  • 2 cm kencur
  • 1 cm
  • 1 lemongrass stalk
  • 1/4 teaspoon nutmeg powder
  • 3/4 teaspoon salt
Making Steps 

  • The first step, mix all the ground spices with cooking oil.
  • Then coat the squid with half the mixture of ground spices.
  • Mix the remaining spices with the cassava leaves.
  • Then put the cassava leaves into the squid.
  • Next, wrap the squid in banana leaves.
  • The last step, grilled squid that has been wrapped in banana leaves. Wait until cooked and the squid betutu is ready to be served.
