Zucchini is another vegetable that can be adapted very well to Mexican recipes. We can find it in soups, baked goods and other dishes. Zucchini, as they are also known, have different sizes, colors and shapes that vary according to their species. green and elongated are what we will need to prepare the following recipe to make vegetable pancakes. 

Ingredients

  • 1 zucchini
  • 1 large carrot
  • 1 egg
  • Chopped onion
  • Salt and pepper
  • Paprika
  • 1/4 cup of oatmeal
  • Panela cheese cut into cubes

Preparation
