Asem tamarind meat, fresh broth always inspires appetite for a healthy lifestyle


Asem tamarind meat is known as beef stew from Central Java. Clear soup, tamarind tamarind meat dominated by sour, spicy, savory refreshing taste. The sour taste comes from a solution of tamarind and green tomatoes. Meanwhile, the spicy taste in this dish is contributed by large red chilies and green gendot chilies which are often found in the highlands of Central Java.

For the cooking process, it's not as complicated as you imagine. So, this dish is suitable to try at home. There are two stages that must be done, namely boiling the meat and sautéing the spices. Cook the meat until cooked and tender. Use low heat so that the meat is cooked evenly and the spices are absorbed perfectly. You can add vegetables such as green beans to complete the nutrition. Ingredients

  • 500 g beef ankle, cut into 5 cm cubes
  • 2 liters of water
  • 4 tsp tamarind water solution
  • 50 g chickpeas, cut into 3 cm
  • 3 cloves of garlic, coarsely chopped
  • 8 red onions, coarsely chopped
  • 2 large red chilies, cut into 2 cm
  • 2 large green chilies, cut into 2 cm
  • 2 bay leaves
  • 2 cm loose, bruised
  • 4 green tomatoes, cut into 4 parts
  • 3 tbsp Bango Sweet Soy Sauce
  • 2 tsp salt
  • 1.5 tablespoons brown sugar, finely comb
  • 2 tbsp oil, for frying

Cooking method

  • Heat water in a saucepan, boil the meat over low heat.
  • Heat oil in a frying pan, saute shallots, garlic, all chilies, galangal, and bay leaf until fragrant.
  • Pour the stir-fry into the beef stew, mix well.
  • Add brown sugar, salt, and Bango Kecap Manis. Stir well.
  • Enter the tamarind water solution, beans and tomatoes, mix well. Cook until the meat is tender.
  • Lift and serve.

This recipe is suitable for serving at home for your beloved family. Serve with white rice or ketupat. If you want to complete it, also try the Tempe Bacem as well as an additional side dish at the dinner table.
