Together with Sous Chef Sheraton Grand Jakarta Gandaria City, Fatakh Amirudin, demonstrated how to make tongseng goat.

Ingredients:
- 250 grams of goat meat
- 2 bay leaves

- 3 tablespoons (tbsp) of cooking oil
- 500 ml coconut milk liquid

- 3 cloves of garlic
- 5 cloves of red onion
- 2 grains of roasted hazelnut
- 2 cm turmeric
- 1 cm

- 1 tsp salt

1. Cut the goat meat, the size according to taste then set aside. It is recommended when cutting the goat against the fibers of the meat so that the meat is tender.
In addition, when choosing goat meat, it is better to choose young meat, the characteristics of the meat are red and lead to pink. Once cut then season with salt and pepper.
2. Heat oil in a frying pan, saute ground spices until fragrant, then add lemongrass and bay leaf. Then stir until smooth and fragrant.
3. After that add water and stir until smooth. Then add the liquid coconut milk. Reduce the heat and continue to stir the coconut milk until cooked.
Avoid using high heat when cooking coconut milk because coconut milk can be damaged and broken. Set aside the tongseng sauce.
4. Then saute the sliced onion and garlic until slightly wilted and fragrant, add the mutton.
5. Cook while stirring until the spices are evenly distributed and seep into the meat. Wait until the meat is tender and changes color.
6. Then add the cabbage, cayenne pepper, sliced scallions, stir briefly, cook until boiling. Then add the coconut milk while stirring so that the coconut milk doesn't break. It is recommended to use low heat after the coconut milk boils.
7. Enter the tomatoes and sweet soy sauce, cook briefly until the gravy looks thickened.
8. Tongseng is ready to be served, serve while hot with a sprinkling of fried onions and chips as a complement. You can also enjoy it with warm rice.
