Bubur lemu is a special food of Solo, in ancient times it was made as an energy restorer.

Lemu porridge has a savory and fragrant taste, served with stir-fried chicken in soy sauce or chicken opor, eggs, and sambal goreng krecek.

Stir-fried chicken cooked with spices consisting of shallots, red chilies, green chilies, cumin powder, cloves, and sweet soy sauce.

Solo Lemu Porridge Recipe

Ingredients:

  • 200 grams of rice
  • 1 1/2 medium coconut milk
  • 25 cm lemongrass stalk, bruised
  • A piece of galangal
  • 10 grams, crushed
  • A sheet of bay leaf
  • 400 grams of chicken
  • 1 tsp salt, to taste
  • 1 tbsp (10 ml) lime juice
  • 200 ml cooking oil for frying
  • 30 grams of red onion
  • 10 grams of red chili
  • 10 grams of green chili
  • 250 ml of water
  • 1/2 tsp salt, to taste
  • 1/4 tsp cumin powder
  • 3 whole cloves
  • 10 ml of sweet soy sauce

1. Mix rice with coconut milk, lemongrass, galangal, and bay leaf, cook until cooked.

2. Cut the chicken into quarters. Sprinkle with salt and orange juice, leave for a while. Fry until cooked and brown. Lift and drain.

3. Shallots, red chilies, and green chilies are finely chopped.

Fry with two tablespoons of remaining oil from frying chicken until fragrant, add fried chicken and pour water, bring to a boil.

4. Season with salt, cumin, cloves and sweet soy sauce, continue cooking until the spices are absorbed. Remove and serve with porridge lemu.
